1 pound +/- cubed steak (beef or venison)
1 tsp kosher salt
½ tsp black pepper
½ Cup all-purpose flour
2 whole eggs, beaten
1/4 Cup oil (canola, olive or bacon drippings)
1 Cup chicken stock
¼ Cup milk

Directions:
Directions:
1. Salt and pepper both sides of the meat.
2. Place the flour into a shallow pan, and eggs into a separate shallow pan.
3. Dredge the meat on both sides in the flour, then in the egg and again in the flour
again. Set aside for a few minutes.
4. Cover the bottom of the skillet with oil and set over medium-high heat.
5. When the oil is ready, add the meat. Cook each piece on both sides until golden
brown, approximately 4 minutes per side.
6. Add about a tablespoon of oil to the pan and whisk in 3 tablespoons of flour.
7. Add the chicken stock and whisk until the gravy comes to a boil and begins to
thicken.
8. Add the milk and whisk until the gravy coats the back of a spoon, approximately 5 to 10 minutes.
9. Return the steaks to the gravy and cover, simmering on low heat for about 10 minutes.
