2 T EVOO
4 cloves garlic, minced
1 c white onion, diced
2 celery stalks, chopped
1 c green pepper, chopped
1 c red pepper, diced
1 bunch scallions, chopped
3 c cauliflower, riced in food processor or box grated
2 heaping tsp fresh thyme
1 bay leaf
2 tsp salt
1/2 tsp pepper
1 tsp chili powder, or to taste ( I used a T)
1 tsp cumin, or to taste ( again I used a T)
2 c chicken stock or vegetable

Directions:
Directions:
Heat oil over med heat in a large skillet
Add garlic, onion, celery, peppers and scallions; sauté until soft
Stir in riced cauliflower, adding thyme, bay, salt, pepper, chili and cumin
Add in chicken stock
Allow to simmer over med low heat, stirring frequently, for 30 minutes or until liquid is cooked down

Adjust seasonings to your liking. I usually add more thyme and cumin but you may not like that much. The cumin is what gives this the "dirty" look in lieu of the chicken livers in a regular dirty rice recipe. It also adds a really nice flavor. It's very good.
