1 Cup raising, plumped, drained and cooled
1/2 Cup lard
2 Cups sugar
1 large egg
4 TBS lemon juice
1 1/2 Cups unsweetened applesauce
1/2 Cup boiling water
2 tsp baking soda
1 tsp vanilla
2 1/2 Cups flour
1/2 Cup salt
1 1/2 tsp cloves
3 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp allspice
1 cup chopped walnuts (black walnuts are best)

Directions:

Cream lard, sugar and egg.

In separate bowl, add lemon juice and applesauce. Mix boiling water with baking soda and add to the applesauce mixture. Stir until foamy. Add this mixture to creamed sugar and stir in vanilla.

Gradually add mixture of flour, salt, and the spices. Stir well. Add raisins and walnuts.

Grease and flour a tube pan. Bake at 300º for an hour. Check to see if done by inserting a toothpick in middle of cake area. Bake in additional 5 minute increments until dome.

This recipe has been passed down from Great Grandma Butts to my Grandmother Elizabeth Marie Reese, to her daughter, my Aunt Catherine, to my cousins and me, and now to you. Like many of the others in this book it truly has been in the family for many generations.
