2 small packs lime jello (can use 1 sugar-free)
2 small packs strawberry jello (can use 1 sugar-free)
1 large can (about 15 ounces) crushed pineapple drained, save juice
1 can jellied cranberry sauce
8 ounce package of cream cheese
1/2 Cup milk
5 1/2 Cups water
1/2 TBS Knox unflavored gelatin

Uses a large baking pan, 9 x 13 inch or larger.

1st layer: Dissolve lime jello in 2 1/2 cups of hot water. Add 1/2 cup of pineapple juice. Place in refrigerator until it is just slightly gelled. Add crushed pineapple, pour all into pan, and refrigerate until fully gelled.

2nd layer: Soften cream cheese and add to 1/2 cup warmed milk. Add Knox. Whisk until lumps are gone (difficult to do, I sometimes use a blender). When smooth and room temperature, pour slowly onto first layer in pan. I sometimes use a ladle. Refrigerate until fully gelled.

3rd layer: Dissolve strawberry jello in 3 cups hot water. Stir in cranberry sauce and whisk or stir until smooth. Chill in refrigerator until it is just slightly gelled. Once 2nd layer is firm, pour the 3rd layer gently onto it.

Chill until firm.

This was something mom made every Christmas for us. It is still one of my favorite things. I've even changed the colors of the jello to use it at other times such as Easter or Thanksgiving.
