Traditional Scottish Shortbread

1 lb butter, set out until very soft
1 C sugar
1 C white rice flour (found in health food store)
4 C Gold Medal flour

Directions:
Directions:
Cream butter until like "whipping cream" and gradually add sugar. Allow to beat a few more minutes. This is important!

At a very low speed slowly add one cup of flour at a time allowing it to be mixed in well.

Divide dough and place in 2 - 10x10 square pans or pans about same total size (depends how thick it turns out) Push down in the pans with fingers and palm of hand. Prick dough numerous times with fork (must do) and bake at 300 °F for approx. 50 min. until golden brown.

Cut into fingers immediately after removing from oven and sprinkle with sugar. Store in airtight container.
