3 T olive oil
4 large zucchini, grated
2 14oz cans diced tomatoes( italian style)
1 onion, diced
1 garlic cloved, minced
6-8 cups chicken broth
Basil to taste
2 1/2 cups regular or spicy tomato juice
1 bag cheese tortellini - prepared

Directions:
Directions:
Heat olive oil, saute onion with garlic, then add zucchini. Saute about 3 minutes then add tomatoes, broth, basil and tomato juice. Simmer for 20-25 minutes. Add cooked tortellini and serve with parmesean cheese.

Kids love it and saves well. Do not freeze with tortellini, keep separate . ENJOY
