Date Puddings
Melted butter, to grease
285g pitted dates, halved
225g boiling water
1tsp bicarb soda
80g butter, at room temperature
100g brown sugar
2 eggs
190 SR flour

Butterscotch Sauce
140g brown sugar
100 g butter
250g cream
1 tsp vanilla essence

To Serve
Double cream

Directions:
Directions:
Preheat oven to 180ºC. Brush six 185ml (3/4 cup) non stick muffin mans with melted butter to lightly grease. Line the bases with non-stick baking paper.

Add the dates, water and bicarbonate to TM bowl and leave for 10 minutes to soften.
Add sugar and butter to bowl and process Sp6 for 8 secods.
Scrape down bowl
Add eggs and flour. Process Sp 5 for 5 seconds.
Spoon the mixture into the prepared pans and smooth the surfaces. Bake in oven for 25-30 minutes or until the surfaces spring back when lightly tapped. Set aside in the pans and stand for 5 minutes before turning onto a wife rack to cool slightly.

Butterscoth Sauce
Add brown sugar, butter and cream to TM bowl and cook 80ºC Sp1 for 2 min.
Cook further 3 min Sp 4 until sauce thickens.

To Serve
Divide the puddings among service plates. Top with double cream and drizzle over the sauce to serve.
