Cookie:
1 C butter softened
1/3 C heavy whipping cream
2 C flour

Filling:
1/2 C butter softened
1 1/2 confectioners sugar
2 tsp vanilla
food coloring

Directions:
Directions:
In a small bowl combine butter, cream and flour. Cover and refrigerat for two hours or until dough is easy to handle.

Divide into thirds. Let one portion stand at room temperature for 15 minutes. (Keep remaing dough refrigerated until ready to use) Preheat over to 375º. Roll out dough to 1/8 in thickness. Cout ith a 2 inch round cookie cutter. Place cutouts in a shallow dish filled with sugar. Turn to coat. Place on ungreased baking sheet, prick with fork. Bake 7-9 minutes or until set. Cool on wire racks.

For Filling:

In a smoll bowl, cream butter and sugar until light and fluffy. Add vanilla. Tint with food coloring. Spread about 1 tsp of filling over cookie, top with remaining cooke.

These are really good Christmas cookies. Next time I make I will try rolling and forming the dough into a log. Chill, then slice into 1/8 inch slices. Thought this might be quicker.
