6 quarts water
6 to 8 half chicken breast with bone and skin
(Pack of necks and backs from a turkey) Optional
2 cups chopped celery
1 cup chopped carrots
(Chicken base to taste) about 1/3 cup
1 tablespoon parsley

Dough:
6 cups flour
6 eggs
2 teaspoons salt (more or less)
3/4 cup (just enough water to make dough workable.
2 tablespoons oil
1 teaspoon baking powder

Cook 1 quart diced potatoes (or less) with enough water to cover and 1 tablespoon chicken base. Cook till just soft, don't drain (set aside).

Cook chicken, celery, carrots (and turkey parts if used) and chicken base in water. Cook till chicken is soft. Remove chicken from broth onto a pan to cool. Remove skin and bones and discard. Bring broth back to a boil after you make the dough.

In a large mixing bowl put flour, baking powder, salt. Beat eggs with oil and water in a separate bowl. Make a well in the flour mixture and pour liquids in center. Take a fork and mix, then use your hands and just toss, (Do not knead!) until you feel like it needs to be kneaded to hold together, only about 6 times. If dry or too wet, either add flour or a little more water. Cut dough into about 6 pieces. Roll each piece into thickness of your liking. Cut with a pizza cutter or a sharp knife into pieces (like a square inch); When broth is boiling drop the pieces in the broth. Work very fast. When all dough is in broth stir well and put a lid on. Check it and stir every 10 minutes. Test for doneness after 30 minutes. Add chicken back and potatoes. Make sure potatoes are hot. Cook all for another 10 to 15 minutes.

Pat gave me this recipe from Grandma Phillips. She sat down and wrote it out while Grandma was making it. So glad she kept this. We often watched her make it, but none of us ever wrote it down. Thanks Pat.
