1 ½ cups boiling water
1 ¼ cups sugar
5 T. cornstarch
2 eggs
1/8 t. salt
Juice of two lemons
1 pie crust, baked

Directions:
Directions:
1. Separate the two eggs into separate bowls.
2. Add 2 T. of sugar to the egg whites.
3. Boil water and 1 ¼ cups of sugar until sugar dissolves, then sprinkle cornstarch into sugar and water mixture.
4. Cook 3 minutes, then add egg yolks and lemon juice. Cool slightly and pour into a baked pie crust.
5. Mix egg whites and sugar with an electric beater until egg whites are stiff.
6. Carefully spoon stiff egg whites on top of pix mixture.
7. Bake at 300º for 10 minutes or until golden brown.
