1 1/3 c. oil
4 eggs
3 c. flour
2 c. ground carrots (can be frozen in advance and let to thaw)
2 c. sugar
2 1/2 t. baking powder
1 3/4 t. baking soda
1/2 t. salt
2 t. cinnamon

Directions:
First, mix the wet ingredients. Then, add the dry ingredients. Bake @350º in a 9 x 13 pan for about 50 minutes.
