1 cup sifted cake flour
7/8 c sugar
egg whites from a dozen eggs
1/3 t salt
1 3/4 t cream of tartar
1/2 t almond flavor
1 1/2 t vanilla
3/4 c sugar

Directions:
Directions:
Sift together 3 times: cake flour and 7/8 c sugar. Set aside.
Beat egg whites, cr of tartar, almond and vanilla flavor until very foamy. Then add remaining sugar one tablespoon at a time.
Continue beating until batter does not slip from the bowl. Then gently fold in the flour mixture.
Bake in angel food cake pan at 350º for 40 minutes.

Grandma told me that using electricity to mix this recipe was cheating, It should be done with a hand beater and a whisk. I don't think she will roll over in her grave....but you might have to explain yourself to get into heaven.
