Ingredients:  
1 1/4 cup flour
1 1/2 TBSP sugar
1/4 TSP salt
1 TSP grated lemon peel
1 cup milk
2 beaten egg yolks
1 TBSP salad oil
2 stiffly beaten egg whites
frying oil
4 granny smith apples, cored and sliced crosswise, 1/2 inch thick
sifted powdered sugar
whipped cream

Directions:
Directions:
1. Stir together flour, sugar, salt and lemon peel.
2. Combine milk, egg yolks, and 1 TBSP oil. Add to flour mixture, stirring just until combined.
3. Fold egg whites gently into batter.
4. Heat oil in fryer to 365º.
5. Dip apple slices into powdered sugar and then in batter to coat generously.
6. Fry just until golden brown on both sides.
7. Sprinkle again with powdered sugar and serve hot with whipped cream.
