Ingredients: 1 3/4 C. Sifted all-purpose flour 1/4 t. double-acting baking powder 1 t. baking soda 1 t. salt 1/2 t. cinnamon 1/4 t. ground cloves 1 1/3 c. sugar 1/3 c. soft shortening (I use Butter Crisco) 2 eggs 1 c. cooked or canned pumpkin 1/3 c. water or milk (I use milk) (1/2 t. vanilla) – I add this optional ingredient 1/2 c. coarsely chopped nuts 1/3 c. raisins or chopped dates (never added either)

Directions:Preheat oven to 350 degrees. Grease 9x5" loaf pan Sift together: 1 3/4 C. Sifted all-purpose flour 1/4 t. double-acting baking powder 1 t. baking soda 1 t. salt 1/2 t. cinnamon 1/4 t. ground cloves In a large bowl, beat until light and fluffy: 1 1/3 c. sugar 1/3 c. soft shortening (I use Butter Crisco) 2 eggs Add and beat in: 1 c. cooked or canned pumpkin Now add the sifted dry ingredients in 3 additions alternately with: 1/3 c. water or milk (I use milk) (1/2 t. vanilla) – I add this optional ingredient Do not overbeat between each addition. Fold in: 1/2 c. coarsely chopped nuts 1/3 c. raisins or chopped dates (never added either) Pour batter into greased pan and bake about 1 hour or until bread tests done. |
