1 c. butter, room temperature
1 1/2 c. granulated sugar
1 tsp. vanilla extract
1 tsp. orange or lemon extract
3 eggs.
3 3/4 c. all-purpose flour
pinch of salt
2 tsp. baking powder
3/4 tsp. baking soda

Sugar crystals if desired for decorating icing

In large bowl, beat together first 5 ingredients until light and fluffy. Mix in next 4 ingredients until thoroughly blended. Divide dough into 2 equal portions.
Wrap and refrigerate until firm, several hours or overnight.

To bake, preheat oven to 350º . Grease baking sheets.

On a floured surface, roll dough 3/16 to 1/4 inch thick. With lightly floured cookie cutters, cut into desired shapes. Place 1/2 inch apart.

*Sprinkle with sugar crystals if desired, or ice when cooled. I like icing and sprinkles.

Bake 350º for 7 - 9 minutes or until pale in color. Baking time will depend on size and thickness of cookie. Watch carefully. Remove cookies from baking sheets; cool on racks.

Recently, I began rolling the dough between 2 pieces of parchment paper and using powdered sugar to "flour" surface. They say the powdered sugar doesn't interfere with the gluten. It worked for me!
