1 1/4 lb Whole milk Ricotta
2 eggs well beaten
1 3/4 tsp. salt
1/4 tsp. black pepper
Parsley (about 1/3 cup)
1/3 cup Grated cheese
1 lb Lasagna noodles
8 oz Mozzarella cheese
Sauce

To make sauce use: 1 Lg can of whole peeled tomatoes pureed in the blender, 1 lg can tomato paste, 1 lb hamburg

Directions:
Directions:
For the sauce: Brown the hamburg and drain. Add the tomatoes and tomato paste. Season as you would regular spaghetti sauce (see sauce recipe). Let cook for at least 1/2 hour.

Bring large pot of water to boil. Add lasagna noodles to boiling water and cook per directions on box or about 15 minutes. Rinse and drain.

While lasagna noodles are cooking, mix together ricotta, eggs, salt, pepper, parsley, and grated cheese until well blended.

Using a large baking pan (13x9): Cover bottom of pan with sauce (1/3 of sauce). Then layer as follows: Lasagna, sauce (1/3 of sauce), lasagna, all ricotta, lasagna, mozzarella, remaining sauce. Sprinkle with some grated cheese.

Cover and bake at 350º in a preheated oven for 20-25 minutes or until heated through.
