2 c. milk
2 c. dry white wine
2 oz. unsalted butter
¼ c. flour butter roux
3 Tbsp. cornstarch
½ tsp. Worcestershire sauce
½ tsp. Tabasco sauce
½ tsp. black pepper
½ tsp. celery salt
1 ½ lbs. Sonoma "Hot Pepper" Jack Cheese
1 lb. Sonoma Garlic Jack Cheese
2 oz. cheddar cheese

Directions:

Bring milk to a boil; add butter roux. Stir constantly. Add white wine and corn starch, stirring constantly. Add cheese and remainder of ingredients. Pour into fondue pot and serve.

For the wine I use Fume Blanc. Great with San Francisco Sourdough Bread.
