1 pound Elbow/Shell/Fusilli/Farfalle pasta
3 stalks celery, chopped
1 green pepper, chopped
1 red pepper, chopped
1 small cucumber, seeds removed, chopped, drained
2 bunches green onion, chopped or 1 small sweet onion, chopped
1 cup Miracle Whip or Mayonnaise
3 hard boiled eggs, sliced for garnish
Paprika, sprinkled for garnish
Optional: 1 tablespoon of sweet pickle relish

Directions:

Boil macaroni until al dente, drain and place in refrigerator to cool.

Once cooled, mix 1/2 cup Miracle Whip or Mayonnaise on pasta as soon as possible to coat.

In large bowl, place cooled macaroni and all chopped vegetables and add remaining 1/2 cup Miracle Whip or Mayonnaise, and optional pickle relish; mix thoroughly.

Salt and pepper to taste, mix again.

Arrange sliced hard boiled eggs on top and sprinkle with paprika.

Cover and refrigerate for a few hours until ready to serve.

I love mayonnaise, but Carol likes a mixture of the mayonnaise and Miracle Whip.
