Ingredients: 2 lbs ground beef 2 eggs 1 sleeve of saltine crackers 1/2 onion diced season salt pepper

Directions: |
Directions:First fun step is to smash the crackers in the tube before opening. (Don't get too wild with the smashing...the tube will open and tiny saltines will go flying all over the kitchen!) Once they are nice and crumbled up then open up the sleeve and pour them in a large bowl with all the other ingredients. Second step is to get your hands dirty! yup Grandma always stirred it up by hand! So dig in and get it all mixed together. Once it is all mixed up, form it into a giant ball and place it into a skillet set to medium or medium/high with a little oil. (to keep it from sticking, but to also get a nice crunchy crust on the meatloaf!) Now there are two ways to finish this. 1) put a lid over the skillet and let the meatloaf steam cook until the meat is done all the way through. Or 2) put a lid over it to help it cook half way through. Then with great care and coordination, flip it over to get a crunchy crust on both sides and cook until meat is done all the way through Enjoy!! |

Notes: I always loved making this Meatloaf with grandma. It was such a fun meal to make as a kid and it still brings me back to her kitchen, her skillet and her smile! She was always so happy when she was cooking for her family. Grandma always served her meatloaf with mashed potatoes and usually peas! Ketchup for the meat and Butter for the potatoes were always on the table to put on if you so desired. And that is still the meal I make today. It is easily our favorite meal!
