2 medium onions, chopped
1/4 cup butter
6 medium carrots, peeled and cut in chunks
2 10-oz cans chicken broth
2 cans water
salt and pepper to taste
1/4 tsp nutmeg
1/2 cup dry white wine

3/4 cup heavy cream
fresh mint or parsley for garnish

Directions:
Directions:
In a large stockpot, saute onions in butter until tender. Add carrots, potatoes, broth and water. Cover and simmer until vegetables are tender (20 min). Pour into a blender and puree. Add seasonings and wine.

To serve, reheat almost to a boil. Pour into soup bowls, and add 2 Tbsp of cream to each bowl, and garnish with sprig of mint or parsley.
