2lbs Frozen Cheese Tortellini
2 Tbsp Salt
1C Extra Virgin Olive Oil
1/2lb Thinly Sliced Prosciutto
1lb Fresh Pea's(shucked)
1/4 C White Wine Vinegar
1/4 C Fresh Lemon Juice
1Tbsp Dijon Mustard
3 Cloves of Garlic, finely minced
Freshly ground pepper to taste
1 Bunch of Fresh Basil
Chopped Parsley

Cook tortellini in 5 quarts boil water until plump and tender 8-10 min, add salt to water a few minutes before tortellini is cooked. Drain and rinse under cold water. Pour a few tablespoons of olive oil over pasta and toss gently to prevent sticking

Trim fat from Prosciutto and cut into small squares. Steam peas just until tender then plunge into cold water to stop cooking and preserve color. Drain and let air dry on paper towel.

In a stainless steel bowl combine vinegar lemon juice, whisking while adding olive oil in a slow steady stream until vinaigrette is well blended and thick.

Combine tortellini, prosciutto and peas in a large bowl and pour half of dressing over mixture. Toss gently to coat. Tear fresh basil leaves into quarters, and add to salad. Chill. Before serving , moisten with more vinaigrette, toss and transfer to serving and later sprinkle with parsley.
