Stuffed Zucchini Recipe

2-3 Zucchini Squash
1-1 1/2 onions-chopped
3/4 lb of chopped beef
3/4 c Italian Sauce
Pinch of Thyme
1/2 tsp garlic powder
1/2 tsp sweet basil
3/4 tsp Oregano
Slices of Mozzarella Cheese for topping

Directions:
Slice Zucchinis lengthwise and scoop out seeds and discard. Then scoop out the Zucchini leaving enough to have a firm shell for filling in the shell. Dice the scooped out Zucchini.
Parboil Zucchini shells ...careful not to boil too long. You still need them to be firm.
Brown meat in frying pan. Add chopped onions and chopped Zucchini to meat in pan. Then add Italian Sauce, Thyme, Basil, Oregano, garlic powder, . Cover and simmer about 15-20 min. Then add 1 C italian flavored breadcrumbs. Mix well. Stuff filling into parboiled Zucchini shells. Spoon Italian sauce over the top of stuffing. Then top with slices of Mozz. cheese.
Bake at 350 degrees about 1/2 hour until cheese is slightly browned.

Delicious all in one meal.
