1 Tbsp. oil
4 cloves garlic
1 lbs. fresh asparagus. cut into 1-inch pieces
1 lbs. chicken tenders, or boneless, skinless chicken breast, cut into bites size pieces
4 scallions, cut into 1-inch pieces
1 Tbsp. fresh ginger, minced
1 Tbsp. low-sodium soy sauce

Directions:

Heat oil in a large skillet or wok over high heat. Add garlic. Add asparagus and cook for 3 minutes, stirring frequently. Remove garlic. Add chicken and cook for 5 minutes, stirring frequently. Add scallions, ginger, and soy sauce,. Cook, stirring out 3 minutes more, or until chicken is done. Serve with rice, bulgur, or other, grain, or on top of a salad
