1 c. dry pinto beans
2 quarts water
1 1/2 lb. lean bonelss pork roast, trimmed and diced into 1/2-inch cubes
2 tbsp. cooking oil
1 large onion, chopped
2 potatoes, peeled and diced into 1/2-inch cubes
16 ounces chicken broth
1/4 tsp. ground oregano
1/4 tsp. minced garlic
1 tbsp. ground cumin
8 ounces chopped green chilies or to taste
cayenne pepper to taste

Wash pinto beans and soak in water overnight. Cook until tender. In a large kettle heat oil and saute onions until clear. Add pork cubes, toss with onions and cook until pork is lightly browned. Add potatoes, chicken broth, tomatoes, oregano, garlic, cumin and green chilies. Drain and rinse pinto beans. Add to stew, cover, reduce heat and simmer 1 to 2 hours or until potatoes are tender. Add water if necessary during cooking. Add cayenne pepper.
