1 cup cornmeal
1 t. baking powder
1/2 t. baking soda
1 t. salt
1 egg
1 cup buttermilk
1 T. bacon grease (or butter)

Directions:
Preheat the oven to 400º. Spray a cast iron skillet with Pam and add the tablespoon of bacon grease. Place the skillet in the oven to melt the grease. Mix all other ingredients and pour into the hot skillet. Place pan back in the oven and bake for 20-25 minutes.

To make buttermilk if you don't have any. Take 1 cup of milk and add 1 t. white vinegar or lemon juice. Let this sit for a couple of minutes!
