2 cups mashed cooked sweet potatoes (about 3 sweet potatoes, roasted at 375/400 for 1 hour)
3/4 cup sugar
1/2 cup Crisco
3 cups flour
7 tsp baking powder
1/2 tsp salt

Directions:
Directions:
1. Pre-heat oven to 350º.
2. Place Crisco and sugar in a bowl. Add hot sweet potatoes and mix (Crisco should melt into the sweet potatoes).
3. Sift flour, baking powder, and salt into potato mixture, and fold ingredients together.
4. Roll out dough onto floured surface, and cut into 1/2 inch thick biscuits.
5. Place biscuits on baking sheet with parchment paper or silicone mats.
6. Bake for 20 minutes or until lightly browned on the bottom.
