Oriental Rock Cornish Hens Recipe

4 Rock Cornish hens abt 1-1 1/4 lbs each thawed if frozen
1/3 c each chopped onion and celery
2 tblsp butter
1 c uncooked regular rice
1 can (13 3/4 oz) chicken broth
1 can (8 3/4 oz) crushed pineapple or small can of pineapple juice
Melted butter
1/3 c sugar
1 tsp cornstarch
1/3 c soy sauce
1/4 tsp ginger

Directions:

Wash and pat dry hens
Saute onion and celery in 2 tblsp butter until tender
Stir in rice and chicken broth heat to boiling stirring occasionally.
Reduce heat, cover tightly and simmer for abt 20 min or until all liquid is absorbed.
Stir in pineapple and juice.
Stuff hens lightly with rice mixture.
Place hens breast side up in open shallow pan
Roast for 2 1/2 hrs brushing with butter every 15-20 min.
While hens roast, stir together sugar and cornstarch in small saucepan.
Stir in soy sauce and ginger.
Cook over medium heat stirring constantly until mixture thickens and boils.
Boil and stir 1 min. Cool
Serve in bowls along side with hens for dipping
