2 cups scalded milk
Add to scalded milk:
2 tsp salt
3/4 cup sugar
Add 1/3 cup lard...do not substitute
Cool to lukewarm.

Soften 1 cake (package) yeast in 1/4 cuprwarm water, or use 2 packages of Rapid Rise Fleischman's dry yeast, stir into 1/4 cup warm water.

Mix yeast with cooled liquid.

Add two cups flour.
Mix together thoroughly with dough hook.
Cover, let raise until double in size and bubbly.

1 cup raisins
Enough flour to make a soft dough... 4 1/2 cups.
Knead it, let raise to double in size.

Directions:
Directions:
Turn onto a floured board. Cut into 3 pieces.
Form loaves and put in greased pie pans or cake pans.
Raise until doubled.

Before baking, melt 1/2 stick butter. Baste top of coffee cake, sprinkle with
cinnamon and sugar.

Bake at 350º for 25 minutes or until golden brown.

This recipe goes back to Meta Syron, Grandma Evelyn's mother, or even further back than that. It was very seldom that Great Grandmother Meta didn't have coffee cakes fresh from the oven. This coffee cake was often used with summer sausage for a snack before bed.
