1 large zucchini (Adjust amounts of "stuffing" according to size of zucchini)
1 lb lean hamburger
1 lb Italian sausage
1 minced onion
Minced garlic to taste
Pulp of zucchini that was scooped from the shell, chopped
1 to 2 cans of tomato paste or homemade sauce
Salt and pepper to taste
Oregano to taste
1 cup of bread crumbs
1 cup of fresh parmesan cheese

Slice the zucchini in 1/2 lengthwise. Scoop out the pulp, leaving a shell. Parboil the shell in water 8 to 10 minutes. (This step is your choice if the shell is not too tough.) In fry pan, brown hamburger and sausage. Add chopped zucchini and cook until tender - drain if too much liquid. Add seasonings to taste. Add tomato mixture. Season again. Cook until mixed and tender. Add bread crumbs. Put the full mixture into the shell of the zucchini.

Place on foil covered cookie sheet and bake at 350 degrees for about 45 minutes or until tender. Lower the heat to 200 degrees. Add the cheese and leave in oven until cheese is melted.

Serve as main course or an accompaniment.
