Good sized chuck roast
Soup bones
Onions
Carrots
Shredded cabbage
Canned tomatoes-cut up, with juice
Potatoes
Garlic
Bay Leaf
Salt and pepper to taste

Directions:
Directions:
Put roast and bones in a large stock pot.
Cover with water. Add water to about 3-4 inches over the meat and bones.
Bring to a boil and turn down heat to a simmer.
Simmer on low until meat is very tender.
Remove meat and bones.
Skim fat if needed.
Add onions, carrots, cabbage and canned tomatoes with juice breaking up tomatoes if whole, garlic, bay leaf, salt and pepper.
Simmer till vegetable are almost tender, add potatoes.
Cut meat into bite sized pieces and add back to pot.
Simmer until all vegetable are cooked thru.
Taste for seasonings.

We had this soup on Christmas Eve as long as any of us can remember.
As years went by things have been added such as green beans, corn and sometimes she would make alphabet macaroni to add. The recipe is as how she made it. Add what you want. No measurements here, as Mom did not have a written recipe (or at least that I know of) so you will have to make this according to how may you are feeding and how your family would like it.
