Dough
2 ¾ cups flour (actual 3 cups + 2 hand dips)
½ cup sugar
1 stick butter (melted)
3 jumbo eggs
1 teaspoon baking powder

Filling
3lbs pot cheese
1 ½ cup sugar
3 egg yolks
1 teaspoon vanilla

Decorate with candy shots

Mix all filling ingredients together

Mix dough, by hand - add flour as needed till semi tacky.
Divide in 1/4 - you will get 2 - 9" pies
Roll first 1/4 dough out on wax paper (the wax paper makes it easier to roll as the dough is tacky)
Repart the above step so you have both bottom crust in the pie plate
Layer 9" pie plate with dough
Fill with filling - divide the filling evenly in both pie plates

Roll out 1/4 of dough
Put on top crust
Repeat above step for other pie

Pinch together to seal
Brush top crust with egg yolk
Sprinkle with colored candy shots

Bake 350° for 45 minutes
