2 cups whole milk
2 cups water
1 1/2 tsp salt
1 cup polenta or course cornmeal
1/2 tsp pepper
5 TBS butter
4 oz sharp cheddar cheese
1 oz grated Parmesan

Directions:
Directions:
Bring water, milk and salt to a boil over med heat in a large saucepan. Gradually whisk in cornmeal. Reduce heat to low and cover. Cook 20 minutes, stirring every 3 or 4 minutes to prevent sticking. Once cooked and creamy, add pepper, butter and cheese.

Grandma Riccardo used to make polenta. Everyone in the family loved it but me. It was the old time polenta. Polenta, water and salt. I believe everything is better with butter and cheese!

Leftovers: Cool and slice into 1/4" slices and saute' in butter. Serve with maple syrup for breakfast.
