1/3 cup olive oil
3 onions, sliced
1 chopped green pepper
1/4 cup Hungarian Sweet Paprika (yes, 1/4 CUP)
2 tsp salt
1/2 tsp black pepper
3 pounds beef stew meat, cut into 1/2" cubes
1 (6 oz) can tomato paste
1 1/2 cups water
1 clove minced garlic
1 tsp salt

Heat oil in a large pot or dutch oven over medium heat. Cook onions and green pepper until soft, stirring frequently. Remove and set aside.

In a medium bowl, combine paprika, 2 tsp salt and black pepper. Coat beef cubes in the spice mixture and cook in onion pot until brown on all sides. (You may need to do this in batches. Don't crowd the meat or it won't brown.)

Place all meat back in pot, add onions and green pepper. Pour in tomato paste, water, garlic and the remaining 1 tsp salt. Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender.

Serve with rice or pasta.
