1 tsp salt

In a medium bowl, mix the flour and salt, create a well and add the 2 eggs and mix together with a fork. Then sprinkle some flour on the work surface and knead the dough until smooth. Put the ball back in the bowl and let rest for 10 minutes before rolling out.

I found that cutting the dough into quarters, then rolling out each piece until thin, set aside and generously flour and layer the dough. Repeat, then, gently roll all the layers into a log and using a sharp knife, cut as thin as you’d like.

Ensure that the broth is boiling before adding a handful of noodles at a time to cook. Then, stir, keeping an eye on the noodles and stirring so they don’t stick, until thickened and cooked through. This can be 15-20 minutes.
