3/4 cup vegetable shortening
3 cups oats - quick or old fashioned
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon salt
1 egg
1/2 teaspoon baking soda
1/4 cup water
1 teaspoon vanilla

Directions:
Directions:
Heat oven to 350º F. Beat shortening, sugars, egg, water and vanilla until creamy.
Add dry ingredients; mix well
Drop by rounded teaspoonfulls on to ungreased cookie sheet
Bake 12 to 15 minutes
Remove to cooling rack Store tightly covered
Variations: Add 1 cup of your choice: raisins, chopped nuts, chocolate chips or coconut

Make bar cookies; bake 30 to 35 minutes
ice cream sandwich cookies; flatten slightly before baking 8-9 minutes
