1 lb. carrot, peeled & chopped
3 lg. eggs, lightly beaten
˝ cup sugar
˝ butter
3 Tbs all purpose flour
1 tsp baking powder
1 tsp vanilla

Directions:
Directions:
Place carrots in pot and cover with water. Bring to a boil and cook 45 minutes or until carrots are very tender and drain. Process carrots in a food processor until smooth. Stir together carrot puree, eggs and remaining ingredients. Spoon into a lightly greased 1 quart baking dish. Bake at 350°F for 45 minutes or until set.
