5 or 6 potatoes cooked until tender
1/3 cup onion, minced
4 stalks celery, cut up (opt)
2 eggs. boiled
1/3 cups mayonnaise (or more)
1/2 Tbsp mustard
1/3 sup sweet pickle relish, or minced sweet pickles
Salt to taste

Directions:
Cut up or slightly mash potatoes. Add minced onion, celery, cut up eggs, mustard, pickles, salt and mayonnaise. Mix well and refrigerate until ready to serve.
