3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp. lemon juice
3/4 cup self-rising flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1 cup chopped nuts

FILLING
1 cup powdered sugar
8-oz. cream cheese
1/4 cup butter or margarine
1/2 tsp. vanilla

Directions:
Directions:
Beat the eggs at high speed for 5 minutes. Beat in sugar, pumpkin, lemon juice, flour, baking powder, cinnamon, and ginger. Then pour into a greased and floured cookie sheet, (a jelly-roll pan with a lip). Spread evenly over pan. Sprinkle 1 cup of chopped nuts over cake and bake 15 minutes at 350º. When done, turn out on wax paper while hot. Wax paper should be covered with powdered sugar. Then roll cake in paper and let cool completely.

FILLING
Beat powdered sugar, cream cheese, butter, and vanilla until smooth, then unroll cake and spread with filling. The roll up again without paper. Sprinkle with powdered sugar. Chill
