2 1/2 lb. unpeeled potatoes (or, 6 cups diced cooked potatoes)
3 or 4 eggs
1 cup diced pickles
1 cup diced celery (or 3 tsp. celery seed)
1/4 cup onion, diced fine (or 1 tbsp. per 1 cup diced potatoes)
Chopped mango, if desired
1/4 cup sweet pickle vinegar
1/2 cup heavy cream (or salted dressing)
1/2 cup sugar
3 tbsp. salad style mustard

Directions:
Directions:
1. Measure water while you put on potatoes.
2. When 1/2 done, add 1 teaspoon salt for each cup of water.
3. Bring eggs just to boil. Cover. Turn off fire; let stand 20 minutes.
4. Cool potatoes and eggs. (Potato skins better hot.)
5. Skin and dice potatoes and dice eggs.
6. Add pickles, celery, mangoes and onions.
7. Add sugar and mustard.
8. If you use cream, add pickle vinegar and stir.
9. If not, add pickle vinegar and salad dressing. Add just enough dressing to moisten.
10. Marinate overnight.
11. Next day, fold it over a few times. Taste and add whatever is needed. Sweetness of pickle vinegar depends whether you need more sugar. At times, you need a little bit more salt and usually need more salad dressing and little vinegar. Garnish with pepper or paprika.
