1/2 cup plus 1 tbsp shortening
1/4 tsp salt
1 cup all purpose flour
2 to 3 tbsp cold water

Cut shortening into flour and salt, using pastry blender or crisscrossing two knives, until particles are the size of small peas. Sprinkle with cold water, 1 tablespoon at a time., tossing with a fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 tsp more water can be added if necessary) Gather pastry into a ball.
Filling

3 cups 1/2 inch sliced fresh or frozen (thawed and drained) peaches
1/3 cup sugar
3 tbsp flour
1/4 cup sliced almonds
1/4 tsp almond extract

Streusel

1/4 cup packed brown sugar
1/4 cup old-fashioned oats
2 tbsp all purpose flour
2 tbsp butter or margarine melted

Stir together all ingredients (for streusel ) in a small bowl until crumbly

Heat oven to 425º. Line cookie sheet with cooking parchment paper. Make Streusel; set aside. Make pastry; roll into 12 inch round on lightly floured surface. Place on cookie sheet.

Toss peaches, sugar flour, almonds and almond extract in medium bowl until peaches are well coated. Mound peach mixture on center of pastry to within 3 inches of edge. Sprinkle streusel over peach mixture.

Fold edge of pastry over peach mixture, pleating and pressing in place as needed and leaving about 4 inches in center uncovered. Bake 15 min; cover streusel with aluminum foil to prevent over browning. Bake 15 to 20 min longer or until golden brown. Cool 30 min before cutting
