2-3 tbsp olive oil
3 lb chuck roast
2-3 pinches of salt
1-2 pinches of pepper
1 cup of red wine (optional)
1 large onion, chopped
2-3 ribs celery, sliced
2 cans diced tomatoes, undrained
4-6 cups frozen mixed veggies
2 qt beef broth
1 bay leaves
2 tsp Italian seasoning
1/2 cup pearl barley (or small pasta of your choice)

Directions:
Directions:
To prepare meat you can either cut into cubes and sprinkle with salt and pepper, then brown on all sides or my choice sprinkle roast with salt in pepper brown in large fry pan and place in the slow cooker.

After meat is browned deglaze pan with 1 cup red wine and then pour over the meat in the crock pot.

Place the rest of the ingredients (except pasta or barley) into the crock pot Cook on low for at least 8 hours, this is why I don't cube meat the meat will fall apart just shred when soup is done.

Add Pasta or barley last 10 20 min of cooking or keep separate and just pour soup over before serving.
