4 lb. extra lean chunk, flank, or round steak, coarsely ground
2 lb. extra lean pork, cut into quarter inch pieces
1 lb. extra lean chuck, flank, or round steak, cut into quarter inch cubes
2 large onions, finely chopped
10 cloves garlic, finely chopped
1 (6 oz.) can tomato sauce
2 (10 1/2 oz.) cans beef bouillon
2 (12 oz.) cans beer
7 heaping tbsp. Texas style chili powder
1 to 2 tbsp. flanked or ground chili peppers
4 tbsp. ground cumin
2 tbsp. paprika
2 tbsp. MSG
1 tbsp. sugar
1 tsp. mole powder
1 tbsp. masa harina

Directions:
Brown meat in large skillet until fat is cooked off. Transfer meat to 8 quart stock pot. Cook onions and garlic in remaining pan drippings. then ad to meat and mix well. Add liquids and all spices. Simmer 2 hours. Mix masa with enough water to make a light paste and add to chili about 30 minutes before serving. Makes about 1 gallon.
