6 boneless skinless chicken breasts
1/4 c. butter
4 tbsp. olive oil
1 c. dry sherry
4 tbsp. lemon juice (freshly squeezed)
1/2 lb. sliced mushrooms
salt & pepper
Italian Seasoning

Cut the chicken into strips. Dredge through flour. Melt butter in sauce pan and add olive oil. Fry chicken in this until golden brown. Adding more butter and olive oil as needed. Season while cooking with the above seasonings. When all of the chicken is cooked, place it on a platter and keep it in a low oven to keep warm. To the pan add mushrooms, sherry and lemon juice. Bring to a boil. Deglaze pan just by about one quarter. Return the chicken to the pan and continue deglazing and cooking, gently, until it is deglazed by about one half. Place on platter and serve immediately.
