Melt margarine in a Dutch oven. Add a little olive oil. Coat chicken pieces with flour. Fry chicken until golden brown in the oil and margarine. Remove chicken and keep warm. To the pan add a large sliced yellow onion. Cook until it begins to get translucent. Add 3 tbsp. flour and brown a little. Add 1/2 c. sherry and 2 1/2 c. chicken boullion. Bring to a boil. Add the chicken pieces. Coat all of the chicken and put the lid on and put it in a 350 degree oven for 1 hour.
