2 lbs. lean Ground Beef
2 lbs. Ground Pork
2 lbs. boneless Chicken Thigh Meat
3 large Onions – Chopped
1 large Bell Pepper – Chopped
3 Stalks of Celery – Chopped
1 Clove of Garlic – Chopped
½ Cup of Chopped Parsley
½ Cup of Chopped Shallot
¼ Cup Cooking Oil (or Cook bacon & use drippings)
1 can Cream of Mushroom Soup
4 Tablespoons Hot Sauce
1 15 oz. can of Mushrooms stems and pieces
4 cups Long Grain Rice
Kitchen Bouquet
Black Pepper
Red Pepper
Salt

Directions:
In 12 Quart Pot, heat cooking Oil
Season and Fry the boneless Chicken Thigh meat and remove from pot
Sauté onions, bell pepper, & celery with Hot Sauce
Once the vegetables are sautéed, add the pork and brown.
Add the Ground Beef and brown
Add Water as needed to keep the meat from Sticking to the Bottom of the pot
Add Garlic
Finely dice Chicken Thigh Meat and add to pot
Add Can of Cream of Mushroom Soup
Add Can of Mushrooms
Add Kitchen Bouquet and ½ cup of water to darken the dish
Turn heat down very low and allow oil to rise – Skim Oil
Add salt and pepper to taste
Add Parsley and Shallots – Cover and let simmer on low for 15 minutes
While Meat mixture is simmering, cook the 4 cups of Long grain rice separately as per rice cooking directions
Once Rice is cooked, stir into the meat mixture and stir until thoroughly mixed.
Place lid on the pot (heating of very low) and allow the rice to absorb the flavoring of the meat mixture..
