Eye of round or rump roast
Zatarains or Tony Chacheres roux and gravy mix
1 clove of garlic
Salt
Pepper
Flour
1 onion
2 cans of (14 oz.) beef broth

Directions:
Directions:
Put garlic, salt and pepper in roast. Put flour on roast. Cover bottom of pan with vegetable oil.
Brown roast on all sides. Chop onion. Add onions and let them reduce. Add beef broth and bring to a boil. Cover for 30-45 minutes.
Cut roast and put back in gravy. Add roux and gravy mix a little at a time. Let it steam for about an hour
