16oz. cream cheese, softened
1 (8oz.) can crushed pineapple, drained
1/4 cup chopped green bell pepper
2 tbsp. chopped onion
1 tbsp. salt
1 1/2 cups chopped pecans
You can also add pinches of thyme, rosemary or other herbs (I used thyme, rosemary and basil)

Combine cream cheese, pineapple, bell pepper, onion and salt in bowl and mix well. Shape into a ball. Spread 1 cup of pecans over a flat work surface (I used wax paper for this). Roll the cheese ball in the pecans, pressing the pecans into the cheese as you roll. Place on a serving platter and pat the remaining 1/2 cup pecans onto the cheese ball. Cover with plastic wrap and chill until ready to serve.
