Directions:Step 1---Place the following items in mixing bowl and mix until blended; 1 cup cooking oil, 3 eggs, 2 teaspoons vanilla, 2 cups sugar. Step 2---Sift and measure 3 cups cake flour. Add 1 teaspoon baking soda and 1 teaspoon salt to the flour and sift together. Step 3---Put the flour mixture in mixer with previous ingredients and blend well. Step 4---Remove bowl from mixer and add 3 cups of peeled, cored and chopped Granny Smith apples and 1 cup of pecan pieces to the mixture and mix well. Step 5---Place mixture in a greased tube pan (preferably a 2 piece pan, such as one would use for and angel food cake). Bake in a 350 degree oven for one hour. Step 6---Shortly before cake is done, melt 1 stick of butter in a saucepan until almost melted and add ¼ cup of milk and 1 packed cup of dark brown sugar or light brown. Mix well and cook over medium heat, stirring constantly for 3 minutes. Step 7---After removing cake from oven, you may pour the brown sugar glaze over the cake while it is still in the pan and still hot and let it set until the cake cools. Then loosen the cake from the pan with knife or spatula and place it on a cake plate or you may remove the cake from the pan while still hot and place it on the plate and spoon the glaze on the top and sides of the hot cake. The glaze will soak into the cake. Variation: You can use a bundt pan to bake the cake. When you take the cake out of the oven place a large pyrex bowl over the top of the pan and turn the pan over so the cake goes in the bowl. Pour the glaze over the cake. After the cake has cooled place the cake plate over the top of the bowl and while holding onto the plate invert the bowl. The cake becomes positioned upright on the cake plate. |
