1 - pkg. Chicken flavor Rice-a-Roni
2- 6 oz. jars marinated artichoke hearts
1 green pepper, chopped
1/2 c. mayonnaise
2 chopped green onions
2 chicken breasts, cooked and chopped

Directions:
Directions:
Cook rice according to package directions. Put into a bowl and let stand until room temperature. Add onions and pepper. Drain artichoke hearts, reserving the liquid. Combine mayonnaise and liquid from the artichoke hearts. Mix. Add to the rice with remaining ingredients.

Serve on beds of lettuce for an attractive plate.
