1 lb ground beef
4 large green peppers
1-2 Carrots diced and then minced in food processor
1 Yellow Onion quartered and minced in food processor
1 head of Garlic minced in food processor
2 Kale leaves if you have them,torn and minced in food processor
1-2 Tomatoes cubed
1/4 C Organic Ketchup
1 T Basil
1 T Oregano
1/2 T Marjoram
1/4-1/2 tsp Salt
1/4 tsp Black Pepper
2 handfuls of Parmesan flavored crackers minced in food processor
Jalapeño Flavored cheese cubed

Preheat oven. In cast iron skillet cook ground beef with minced carrot, garlic and onion in olive oil. Break meat up into fine crumbles. While it is cooking cut tops off of green peppers and scoop our membranes and seeds. Rub outsides of green peppers with olive oil and place in foiled lined round baking dish. Add ketchup and cubed tomatoes to ground meat mixture. Crush spices between your hands as you add them to the mixture. Sprinkle with salt and black pepper. Add crackers that have been minced in food processor and stir to combine. Fill green peppers. Poke cubed jalapeño flavored cheese into each green pepper and top each green pepper with cheese. Pull full close to sides of green peppers but do not cover. Bake 50 mins at 350º. Serve with fork and steak knife.

This mixture would be great for stuffing in manicotti before topping with pasta sauce and shredded cheese.
